Region: Whitchurch, Hampshire
Description: From the beautiful chalk downlands of England this classic sparkling wine offers plenty of red berry fruit and a lovely fresh acidity. An ideal paring with trout or smoked salmon. Or simply delicious as an aperitif.

Grapes: 100% Assyrtiko
Region: Santorini, Greece
Description: On the nose some white nectarine with a gunflint minerality and hint of spice. A bone dry wine with lemony freshness, grapefruit and hints of wild flowers. and some stone fruit characters on the palate. Throughout one gets the salty lemon identity of Assyrtiko from Santorini.
Food Pairing: The ideal paring with seafood, especially meatier fish like tuna. Also great with roast chicken.
Other: Sustainable farming. Vegan.
A special and unique way of vine pruning is the one developed on Santorini, known as the Santorini “kouloura”, or “wreath” or “basket”. The origin of this way of training vines is lost down in the passage of time and has been perfected to such an extent that, apart from being the most suitable way of training them, it also gives vines the appearance of natural works of art.
