The wines chosen for Spring by Monique, our sommelier, can be best described as clean and honest. This refers equally to the profile of the wines and to the making process. Each wine has been carefully selected so that we may support small producers who focus on sustainable, bio-dynamic and organic farming methods.

The wines compliment and reflect our very seasonal and thoughtfully simple food. Most of the wines are delicate, layered, versatile and most importantly delicious, which means you can pair them with a wide range of foods

Wine: Wiston Estate Brut NV

Region: West Sussex, England

Grapes: 34% Chardonnay, 33% Pinot Noir, 33% Pinot Meunier

Description: From the chalky soils of Sussex this is like any high quality Champagne. Bone dry with notes of green apples intermixed with gooseberry and a touch of grapefruit

Refreshing and elegant. Ideal aperitif or enjoy with a plate of charcuterie.

Grapes: Chenin Blanc , Roussanne , Marsanne, Grenache Blanc , Viognier ,Verdehlo, Grenache Gris, Clairette Blanche , Semillon and Palomino

Region: Swartland, South-Africa

Description: A full-bodied, creamy, layered wine with plenty of texture. Citrus and stone fruit followed by hints of spice, tea, and citrus blossoms. A wine with incredible length and complex flavour profile. Pair with richer or cheesy style dishes.

Other: Biological farming.

The charismatic Adi Badenhorst is one of the 'mavericks' , together with the likes of Eben Sadie, to put Swartland wines on the map and shine light on the exciting 'New Wave' Wines that South Africa has to offer.

Grapes: 100% Pinot Noir

Description: Summer fruits and gamey, orangepeel and sandalwood notes with a hint of smoke.

Other: Sustainable farming.
