Farro with Beetroot and Roasted Tomato Puree, Minty Yoghurt
Farro is an ancient variety of wheat which you will often find on our menu at Spring. Here we have tossed the grains in a sweet and nutty beetroot puree, with a little jar of herby yoghurt for you to serve alongside. We would pair this with chicken or as a side to any main course. Our bitter leaf salad would work beautifully alongside too.
