Bergamot is a type of citrus fruit, is native from Southern Italy and is available from autumn through spring. Bergamot skin is very aromatic and slowly changes from lime green to greenish yellow towards the end of the season. The oil from the peel of the fruit is used to make essential oil and the extract from the juice can be used to make pharmaceutical products. When it comes to culinary applications, bergamot can be used in dressings, to marinate the fish, sorbets, gelatos and deserts. It is especially good in a G&T.
