The wines chosen for Spring by Monique, our sommelier, can be best described as clean and honest. This refers equally to the profile of the wines and to the making process. Each wine has been carefully selected so that we may support small producers who focus on sustainable, bio-dynamic and organic farming methods.
The wines compliment and reflect our very seasonal and thoughtfully simple food. Most of the wines are delicate, layered, versatile and most importantly delicious, which means you can pair them with a wide range of foods

Description: From the beautiful chalk downlands of England this classic sparkling wine offers plenty of red berry fruit and a lovely fresh acidity. An ideal paring with sea bass or smoked salmon. Or simply delicious as an aperitif.
Wine: Thierry Germain L'Insolite Saumur Blanc 2018
Grapes: Chenin Blanc
Region: Loire, France
Description: Scents of green apples, lime and honey. A rich and juicy wine with excellent acidity and notes of green apples, lime and honey. A hint of tropical notes, but remaining super fresh with a lingering finish.
Ideal with asparagus and any seafood dishes.

Region: Burgenland, Austria
Grapes: 100% Blaufränkisch
Description: A refreshing full-bodied wine with plenty of red and black berry fruit. Good smooth taninins and plenty of spice give this wine an extra layer of complexity.
Lovely paring with pork or beef.
