The wines chosen for Spring by Monique, our sommelier, can be best described as clean and honest. This refers equally to the profile of the wines and to the making process. Each wine has been carefully selected so that we may support small producers who focus on sustainable, bio-dynamic and organic farming methods.
The wines compliment and reflect our very seasonal and thoughtfully simple food. Most of the wines are delicate, layered, versatile and most importantly delicious, which means you can pair them with a wide range of foods

Grapes: 34% Chardonnay, 33% Pinot Noir, 33% Pinot Meunier
Description: From the chalky soils of Sussex this is like any high quality Champagne. Bone dry with notes of green apples intermixed with gooseberry and a touch of grapefruit
Refreshing and elegant. Ideal aperitif or enjoy with a plate of charcuterie.

Grapes: 100% Grüner Veltliner

Description: Named a wine in its birthday suit due to the minimal intervention approach of the winemaker. 100% Grüner Veltliner made from organic grapes. A wine that is unadorned unfined and unfiltered with a small amount of time on the skins. A refreshing, medium bodied wine with notes of pear and apple, as well as a hint of chamomile and black tea.

Description: A refreshing, unoaked red with plenty of black and red berry fruit as well as hints of violet, tobacco, dried flowers and some herbaciousness.
A super versatile red wine that can match with an array of dishes around the table from fish to pasta to more meaty dishes. Think Mediterranean… Suggest serving this wine slightly chilled.
