Still referred to by the traditional name of "Rose Sugar - Zucchero Rosato", this rose petal delicacy retains all the fragrance and flavour of fresh rose petals. Based on a 16th-century Genoese recipe calling exclusively for sugar and fresh rose petals, this unique creation cannot really be defined either as a proper jam, jelly or compote. It was celebrated in Genoa for its supposed medicinal virtues, properties that were mainly attributed to the rose by ancient Arab doctors. Today, despite the greater scientific knowledge we enjoy, the traditional virtues of the rose are still recognised. To best appreciate the delicate fragrance and taste, use our Rose Sugar directly either as a sweetener, much like honey, or as a sauce to accompany aged cheeses.
