The wines chosen for Spring by Monique, our sommelier, can be best described as clean and honest. This refers equally to the profile of the wines and to the making process. Each wine has been carefully selected so that we may support small producers who focus on sustainable, bio-dynamic and organic farming methods. 

The wines compliment and reflect our very seasonal and thoughtfully simple food. Most of the wines are delicate, layered, versatile and most importantly delicious, which means you can pair them with a wide range of foods

With Christmas in mind this premium selection this premium selection starts the festivities with a very special bottle of English Sparkling, moving onto a clean, crisp, classic white with plenty of minerality before moving on to a warming, big red to enjoy with the richer main course.

Wine: Sugrue 'The Trouble with Dreams’ 2014                                                                       

Grapes: 60% Chardonnay, 40% Pinot Noir

Region: Sussex, UK

Description: Refreshing, crisp acidity that is balanced out by  mature stone fruit character and a deep, intense savoury richness. A tiny production from which one can really notice the handmade feel throughout.

Another premium wine by Dermot Sugrue, who has been named Boutique Producer 2020 at the WineGB Awards.

Wine: Chasselas de C de Marin                                                                       

Grapes: 100% Chasselas

Region: Savoie, France

Description: Crystalline, fresh, linear wine with notes of Granny Smith apples, candied lemon, and grapefruit.

Dominique Lucas has been making wine from his beautiful 6 hectares of vineyards situated down the slope from the village Ballaison overlooking Lake Geneva since 2008. He has his roots in Burgundy but fell in love with Savoie after biking in these beautiful green mountains.

Lucas employs biodynamic methods in his vineyard. The soil is tilled by horses to avoid compaction and his vines are worked exclusively by hand.  Multiple harvests are carried out to ensure that all grapes reach optimum ripeness. Animals are also at the heart of his approach and sheep graze amongst the vines. He is guided by the lunar calendar throughout the whole process.

 Wine: Savage Red     

Region: Cape Coast, South-Africa

Grapes: 100% Shiraz

Description: is an elegant, perfumed red with notes of rose, lilies, and pelargonium. The palate has lovely fruit expression, bright acidity and super-fine tannins with plenty of black berry fruit,  saline cassis, sweet grilled herbs and pepper spice.

Duncan Savage is one of the most exciting young talents in South-African winemaking with this (together with the Savage white) being his first independent releases.

A beautiful cool-climate style Syrah making it lovely and versatile and so delicious with any big Christmas meal from duck and goose to beef.
