The wines chosen for Spring by Monique, our Sommelier, can be best described as clean and honest. This refers equally to the profile of the wines and to the making process. Each wine has been carefully selected so that we may support small producers who focus on sustainable, bio-dynamic and organic farming methods. 

The wines compliment and reflect our very seasonal and thoughtfully simple food. Most of the wines are delicate, layered, versatile and most importantly delicious, which means you can pair them with a wide range of foods

Description: Typical aromatic flavours of apple, pear and white flowers with a hint of camomile. The ideal aperitif as well as a great pairing with seafood or a light summer lunch.

Region: Utiel Requena, Spain

Grapes: Bobal

Description: The Academia de Nocturnos range is an homage to the mythical ‘Nocturnal Academy’ of 16th century Valencia, where well-known artists and novelists used to meet – always with a glass of wine in hand! This red is made from 100% Bobal and shows hints of cherries and ripe red berries, with slight balsamic hints of aromatic herbs before a juicy, balanced palate with smooth, mature tannins.
