This wine is made up of four different varieties of white grape, all of which were destemmed and crushed by foot. Fermented individually, on skins, for between a week and two weeks, each variety was then pressed and transferred to concrete, steel and oat vats. Blended in the spring, the wine was bottles in small batches by gravity, no filtration and with minimal sulphur added.
